Tennessee Breakfast Hash

Next week is Thanksgiving, and this Tennessee Breakfast Hash reheats so well. This recipe is also a great way to use sweet potatoes if you don’t love the traditional casserole.

If you aren’t a breakfast person (like me), this is an amazing breakfast for dinner.

As a farmher, I personally grow my own sweet potatoes each summer. When I want to make this recipe I grab some peppers from the garden and collect eggs from our chicken coop.

I am not asking you to do all of that. I made this breakfast hash years before I ever planted a single vegetable. This recipe is that good.

WHAT YOU NEED:

  • Avocado oil (or olive oil)

  • 4-5 washed sweet potatoes (do not peel)

  • 2 pounds of Tennessee Pride Sausage

  • 1/2 cup onion

  • 2-3 sweet bell peppers

  • 4 eggs

  • garlic salt, onion powder

TO BEGIN:

  • After washing the sweet potatoes, cube them. Pro-tip I learned from watching endless Gordon Ramsey shows: chopping the cubes to relatively equal sizes will allow them to cook at the same rate.

  • Chop your peppers and onions. If you don’t have green onions, yellow or red onions work just fine. Use what you have.

    NEXT:

  • In one pan, add your avocado oil on medium heat. Cook the sweet potatoes until they are tender, but not mushy. I like to cover them with a lid. Salt to taste.

  • Flip/stir the potatoes often so that they do not burn or cook unevenly.

    AT THE SAME TIME:

  • Cook the sausage in a separate, deeper pan. Add a sprinkle of garlic salt and onion powder to the sausage.

  • Add the chopped peppers and onions to the sausage. When this dish is finished cooking, they will be soft, but slightly crunchy.

    THEN:

  • When the sausage is fully cooked, add the eggs. They will begin to scrambled in the pan, like when you add eggs to fried rice. Stir often.

    FINALLY:

  • Mix the sweet potatoes into the sausage/veggie pan and ENJOY!

Tennessee Breakfast Hash is the perfect addition to your normal meal rotation. This meal is healthy and filling.

As an adult, I love a quick way to feed myself something delicious.
